Anywho, one of the gals I've met is Cheri over at, It's so Very Cheri.

My grandma made the best squash and I haven't had anything like she used to make until today. It was sooooo simple, sometimes I think we make things more complicated by adding more but in this case less was the answer.
I used..
1/2 white onion
3 small squash
2 pats butter
salt & pepper
cast iron skillet
I let it simmer in the pan until some of the edges were turning crispy, and it still had somewhat of a crunch to it. Guess what? My squash turned out P.E.R.F.E.C.T! Why have I tried cooking squash a bazillion times before...breading it, frying it and never liking it. I hardly did anything this time and the flavor was YUM!
For those of you who already make perfect squash please disregard this post, but I know that there are some of you who will be happy to know just how S.I.M.P.L.E it is to whip up yummy veggies.
Oh yeah, & in case you plan to follow along with Cheri on her 31 days to a thinner you & me....I drank my water today too! :)
