PUMPKIN SPICE PANCAKES RECIPE

I've never been a fan of pumpkin anything, but my kids sure are so this time of year I find myself making lots of pumpkin pies!  I decided to broaden my horizons and find a pancake recipe that incorporated canned pumpkin.


Around our house anything that saves us money is always a good idea so I normally have a big container full of DIY Bisquick (AKA all purpose mix) ready to go.  I wanted to use my pre-made mix as my base for the pumpkin spice pancakes, so it was just a matter of adding the pumpkin & spices.  You can find the recipe for the DIY Biquick here.

Just in case the ingredients/directions are too hard to read from the image above, here they are again.

Ingredients:

  • 2 cups DIY Bisquick mix
  • 1 TBSP. brown sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1 small pinch of clove
  • 1 1/4 c milk
  • 1/3 cup canned pumpkin
  • 1 egg
Tip:  Don't toss your leftover canned pumpkin.  I was able to freeze 5 individual bags that each contained a 1/3 cup of canned pumpkin for the next time I want to make these.

Directions:

  1. Preheat griddle to 350 degrees.
  2. Combine all ingredients until just mixed; don't over stir.
  3. Cook both sides until golden brown.
  4. Serve with butter and warm maple syrup.  Garnish with whipped cream or pecans.

BLUEBERRY WAFFLES

What do you do when your kids want waffles and your out of mix?  You use blueberry biscuits of course!


I borrowed this product image from About a mom, she's also sharing a recipe that was whipped us these Pillsbury blueberry biscuits, you can find hers here.

I always keep biscuits on hand and these are even terrific with just a little pat of butter on them.  However, this time waffles were on the menu and here's the short list of what you'll need to make your own.

  • waffle maker
  • 1 can Pillsbury grand's blueberry biscuits
  • 1/2 cup powdered sugar
  • butter
  • 1/2 cup warm syrup

To make your own simply...
  • Cut each biscuit into quarters.
  • Warm up your waffle maker.
  • Arrange four cut biscuit pieces to the center of your waffle maker and allow them to cook.  I let ours cook approximately 2 - 3 minutes.
  • Pull the waffles apart to create bite sized portions or leave them whole.
  • Dab on a little butter.
  • Sprinkle on a little sugar & add a touch of maple syrup.



Isn't this set of dishes gorgeous?  My girls picked these up one Saturday morning while we were junk'n.

If you like casserole's and you like quick, easy breakfast dishes for the kids then you must try this!

This was so easy to make, just make sure you begin with thawed hash browns or your casserole could turn out a lit' on the crunchy side!

Let me just tell ya...these were delish!  We really try to make the kitchen the center of our home.  I really want to equip my kids with the skills to know their way around a kitchen.  Luckily for me this isn't a battle because they enjoy every minute of it.

This last weekend Blake was at the pow-wow with nana & papa, Britt was gone with Jade, hubby was at the fire station so that just left me and Brooke.  Brooke decided to whip up some blueberry muffins for breakfast.
  Gah, look at that butter melt on these babies hot out of the oven. 
I gave these a big ole thumbs up!  My girls a good baker!
